One of the things that most define our cooking style here at Chef and Steward is that we love simple, tasty, uncomplicated food. Good food needs little embellishment. This is one of those recipes that is so quick and easy just anyone can do. You could be the single who cannot boil water, a child who is discovering the kitchen or a seasoned pro. This recipe is for you. At less than 5 ingredients, the only thing that is critical is that you select the best tomatoes and extra virgin olive oil you can get your hands on.
Halloumi is a very salty, hard, chewy Middle Eastern cheese and goes well with the sweet tartiness of seasonal tomatoes and fresh mint. The salad is great as a starter, for a party served in bite sizes, for afternoon tea, or for a perfectly balanced low carb paleo, gluten free, vegetarian, ketogenic meal or as a part of your mezze or small salad starter plates for a lavish breakfast, brunch or dinner meal.
What are some of your simple go-to salads?
Here is the recipe…
- Roma tomatoes
- Halloumi cheese
- Extra virgin olive oil
- Mint leaves
- Slice tomates into thick slices
- Slice halloumi
- Heat a non-stick pan with a drop of olive oil and swirl around pan
- Sear halloumi on each side in hot pan
- Remove from pot and let cool
- Place on tomatoes, drizzle with olive oil and serve

You got me with the ketogenic. Haven’t heard of that! I do love halloumi, where it be fresh or cooked. It’s pretty lovely with a deep sear though.

Yes Chrystal, its actually the lowest carb diet that some people are on for health and medical reasons. I know you are so adventurous with your food. Where do you find halloumi in Los Angeles?
