This recipe is for you. At less than 5 ingredients, the only thing that is critical is that you select the best tomatoes and extra virgin olive oil you can get your hands on.
Halloumi is a very salty, hard, chewy Middle Eastern cheese and goes well with the sweet tartiness of seasonal tomatoes and fresh mint. The salad is great as a starter, for a party served in bite sizes, for afternoon tea, or for a perfectly balanced low carb paleo, gluten free, vegetarian, ketogenic meal or as a part of your mezze or small salad starter plates for a lavish breakfast, brunch or dinner meal.

Here is the recipe…
- Roma tomatoes
- Halloumi cheese
- Extra virgin olive oil
- Mint leaves
- Slice tomates into thick slices
- Slice halloumi
- Heat a non-stick pan with a drop of olive oil and swirl around pan
- Sear halloumi on each side in hot pan
- Remove from pot and let cool
- Place on tomatoes, drizzle with olive oil and serve
