You may or not know by now that my Chef and Steward Kitchen is always stocked with
“fantabulous” honey. I am a collector of fine honey and when Zach and Zoe Sweet Bee Farm sent me some of the their iconic creamed honey recently, my mind began racing on developing more great honey recipes to share with you like this Creamed Honey Whipped Cheese Strawberry Crostini.
As the daughter of a beekeeper, with one of the best quality artisanal honey, I am used to good, fine honey.
One of the things I really loved about living in Dubai and Ras Al Khaimah and even my two month stint last year in Jordan, was just how huge honey is in the Middle East. Supermarkets devote significant display to honey from all over the world, from commercial, to highly expensive artisanal varieties.
My young one has literally grown up on honey as a sweetener and now prefers fine honey to maple syrup on his pancakes, crepes and waffles.
And yes, he knows the difference. I actually tested him with cheap commercial honey and he didn’t like it. He prefers the fullness and freshness of raw, unfiltered artisanal blends like grandpa’s honey. So we were stoked to get this creamed honey.
I have never had creamed honey before and always wanted to try it. So this is really my pot of gold.
One of the things about really great quality honey is that it is best used in simple, subtle recipes, that allow it to shine. You want to be able to taste the difference that great artisanal honey makes, after all you have paid for it.
Zach and Zoey Sweet Bee Farm is located in upstate Huntington, New York, and is a small black family owned business named after the first two kids, Zach and Zoe. Their brand story is quite organic. Zach had allergies and his parents sought more holitistic natural treatments instead of going the route of allopathic medicine. They did extensive research and discovered the healing wonders of honey. Their neighboring suppliers encouraged them to start keeping bees and the rest is history. In addition to their story, I love ❤️ that they have a fresh new approach with infused honey blends. I will share more on that next week.
Creamed Honey Whipped Cheese Strawberry Crostini
In the meantime, I am excited to finally share a creamed honey recipe so simple yet profound, that makes this beautiful creamed honey shine.
What’s the difference- Crostini, Bruschetta, Tartine?
All of these have one thing in common- they are essentially open faced sandwiches. Crostini pretty much golden brown “little toasts” of bread which are usually brushed with olive oil. It also describes canapés consisting of small slices of toast with savoury toppings such as cheese, shrimp, pate or anchovies. Crostini is the Italian version. Bruschete is from the Italian work bruscare, which means “to roast over coals.” This traditional Bruschetta is usually Italian garlic bread is made by rubbing slices of toasted bread with garlic cloves, then, drizzling the bread with extra-virgin olive oil The bread is slates and peppered then heated and served warm . It is toasted to a greater degree of char and topped with finely diced tomatoes, onions, and basil.Tartine is the same, but using the French word and eaten across Europe in places like France, Norway, UK, Sweden, Germany, Netherlands. In modern times, there has been an increase in sweet crostini and sweet bruschetta recipes. This coul easily have been classified as a sweet bruschetta.
I opted for a sourdough brown wheat bread as the base for mine. This whole thing from top to bottom on every layer, is balanced with sweet tartiness. Say sweet tart really fast.
The creamed honey added to the cream cheese takes it to another level. I find the Zach and Zoe creamed honey tastes like a creamy honey butter. The kind of butter you want to eat by spoonfuls. It elevates the humble cream cheese to the frequency called bliss on the palate.
Topped with ripe strawberries and fresh mint, You will thank me later. It’s the kind of recipe that is great to make together with the entire family. And so versatile. It could easily replace French toast for breakfast, be part of a brunch line up, an afternoon snack or accompaniment to tea or a fine dessert on its own. My kind of recipe.

Creamed Honey Whipped Cheese Strawberry Crostini
A quick, easy, extremely versatile and tasty recipe that will make you dream of European summer time all year long! Perfect use of honey. Make for breakfast, brunch, snack, afternoon tea, party food or dessert. Kid-friendly and vegetarian recipe.
Ingredients
- 8 slices sourdough bread
- 2 TBSP Zach and Zoe Creamed Honey
- 8oz Philadelphia Cream Cheese
- Fresh mint
- 500g fresh strawberries, sliced
- Softened butter for toasting
Instructions
For Toast
Butter one side of bread and toast on a hot griddle or in a hot cast iron skillet. Get a good char on the buttered side then turn to tlast unbuttered side to golden brown. Set aside.
Add creamed honey to creamed cheese and whip together by hand. A paddle mixer can be used for large quantities.
Add the creamed honey whipped cheese to the butter side of the toast, Then top with strawberries and dot with mint leaves.
Serve and enjoy. For breakfast, two per person but as dessert after a large meal, serve one per person if you use large/wider slices of toast.

We do love our honey – especially the raw unfiltered kind. It is worth getting. I’ve never seen this brand but i’ll definitely keep an eye out for it. The whipped cream cheese with strawberries look ideal for breakfast especially with that touch of honey.

I grew up exclusively with creamed honey from a local Mennonite farm and it truly was the best. I agree with you that these types of flavourful honeys should be used in simple recipes where it can shine and not get overpowered by other ingredients. I could see myself using the honey whipped cheese on pancakes, waffles, as a fruit dip and probably by the spoonful, too.
