Keto Chicken Chop Suey Recipe

Remake your favourite Chinese Chicken Chop Suey into this Keto version at home without the excess carbs for a lowcarb meal that is scrumptious and filling. Suitable for diabetics as well as the entire family!

Ingredients

  • 4 skinless, boneless chicken thighs cut into i inch squares
  • 2 tbsp plain oil (peanut, sunflower, high oleic safflower etc)
  • 4 tbsp Lee Kum Kee Panda Brand Oyster Sauce
  • 3 cloves garlic chopped large
  • 1/2 small red onion cut in large cubes
  • 2 tbsp Kikkoman soy sauce
  • Himalaysian pink salt to taste, IF desired
  • 1/2 small green bell pepper (capsicum/ sweet pepper)
  • 300-500 grams pak choi, largely chopped
  • drizzle Pure toasted sesame oil

Instructions

  1. In a small storage container, add chicken thighs, oyster sauce, soy sauce and garlic and mix.  Let it marinate in the refrigerator for up to couple of days for best flavour but it can be done right before cooking anyway. 

  2. When ready to cook, bring the marinated chicken to room temperature

  3. Heat wok to high temperature then add plain oil 

  4. Add chicken, let it sizzle at high temperature then stir fry for about 8 minutes

  5. Add the onions for another minute and continue to stir fry 

  6. Add the capsicum/ bell peppers for another minute and continue to stir fry

  7. Add pak choi  and continue to stir fry for another 2 minutes 

  8. Taste for seasoning. If desired, add salt at this point. 

  9. Additional oyster sauce can aslo be added for flavour if desired in lieu of salt or in addition to salt 

  10. Drizzle sesame oil on top (about 1 tbsp or less) and remove from heat and serve!
