My breakfast: a 3 egg coriander omelette with tomatoes seasoned with salt, pepper and EVOO and garnished with fresh coriander (cilantro).
Not long ago we heard that that bright orange/yellow thing inside the eggs were the reasons we were getting heart attacks. I tried having an egg white omlette once and almost gagged. That was the last of that for me. If I cant have it how it was made, I won’t have it at all. Whole foods have whole uses. Turns out eggs are good for you. They are the perfectly balanced food in terms of macro nutrient proportions : Proteins:Fats:Carbs. You will find many dishes here that include these little wonders because the are the perfect food, cheap and always in season!
The best part is that eggs in the UAE are so much richer, with their orange yolks and tastier than the typical yellow ones in the west that once you adjust to the richness, you can never happily go back!
CHEF’s NOTE: Coriander goes well with both eggs and tomatoes. A little EVOO on the tomatoes brings out the life in the fruit.
