Cauliflower Omlette made by Chef Lij (and half eaten by me)
Today we have officially begun our lifestyle modification to an Atkins Way of Life (WOL).
This is Day one of the Induction Phase for us. We are not new to this lifestyle, but got sidetracked a few months ago. I (Kari) gained like 19lbs in three months. Now it’s time to lose a total of 65. Lij has a chef’s tummy.
This is not a weightloss diet, it is a weight balancing nutritional approach that has health benefits for diabetics and sufferers of high-cholesterol among many other things. For me, it is indigestion, eczema, lethargy and excess weight (comes with the territory of loving food and marrying a chef).
This time, we are taking a low budget approach to eating so that we can prove that it is sustainable to eat delectable food while losing weight. We are counting pennies, not calories. Who wants to count calories anyway? Such a bore!
Grocery for first 5 days:
Australian Carrots
Brocoli
Green beans (or string beans)
Cauliflower (UAE)
White cabbage (the greenest ones)
2.5kg of hammour (grouper)
1 doz eggs
The total bill came up to 80Dirhams (AED) or USD$22.80. Veggies purchased at Geant, Ibn Battuta Mall and fish at the Karama Fish Market.
We are eating seasonally and winter vegetables are cheaper now (for obvious reasons). So eating seasonally not only means you get produce at their best tasting, but also when they are cheapest!
We are moving on Tuesday so we decided to keep the list short until we get settled in our new place.
Breakfast:
Cauliflower Omelette
2 Eggs
60g Cauiliflower, sliced
1tsp Extra Virgin Olive Oil (EVOO)

I’m going to try this one for sure. I love omelettes and I’m curious about the cauliflower in this. The picture looks yummy and I’m sure it tastes as great as it looks!

To be honest, this can be a very bland dish if you stick to salt and pepper . It was my idea. Lij went along for the ride. He added green onions and spices to jazz it up.
